Ikan siakap lagi? hehe..yea..ikan peberet saya..kali ni buat nyonya style pula..
Hari tu tercari-cari menu camni guna pakcik google..memang terlalu banyak versi yang keluar dan kebanyakkannya masak cara stim.
Last2 saya jumpa satu resepi yang sangat simple dalam Kuali.com.
Ada kawan saya cakap resepi ni simple sangat & tak begitu "nyonya" style..hehe. Nama pun eksperimen kan..so saya akan cuba olahan resepi yg lain pula lepas ni..nampak ada saya letak angka [1] atas tu..maknanya akan ada lagi yg ke-2, 3.. :)
Ekceli..saya ada simpan a few resepi "nyonya style" ni...dari kawan2 blog pun ada...in sya Allah mesti akan cuba nex year..(iskk..berapa ari ja lagi kan?!)

INGREDIENTS
700gram Siakap or garoupa fish@600gram
Enough oil for deep-frying
SAUCE
5 tbsp lime juice
4 fresh red chilies
4 birds eye chilies (cili padi) - [boleh tambah jika nak lagi pedas]
2 tbsp sweet plum sauce
1 tbsp chilli sauce
1/2 tbsp belacan stock granules
SEASONING
4 tbsp castor sugar [sy kurangkan]
Pinch of monosodium glutamate [sy tak guna]
1/2 tsp salt or to taste
GARNISHING
Finely sliced kaffir lime leaves
METHOD
Finely sliced kaffir lime leaves.
Clean and gut the fish.
Make four to five deep cuts along both sides of the fish.
Sprinkle lightly with salt and pepper and a little tapioca flour.
Heat enough oil in a wok until hot.
Add in fish and deep-fry over a high heat for one to two minutes.
Lower the heat to medium and fry fish in the hot oil until it turns crispy and golden brown.
Remove from oil and drain on crumpled kitchen paper.
Whisk all the sauce ingredients in a blender until fine and well combined.
Heat 3 tbsp oil in a wok and sauté the blended ingredients over a low heat until fragrant and oil rises to the top.
Add seasoning to taste and simmer for three to four minutes.
Pour the sauce over the fried fish and serve immediately with a sprinkling of finely sliced kaffir lime leaves.

selalu sangat masak kukus ikan siakap... naik jemu pulak...padahal ikan siakap tu sedap! Kalau masak begini memang sungguh menyelerakan. Terima kasih kongsi resepi, cantik ikan tu berposing!
